Vegetable Yakhni Pulao

Traditional yakhni pulao is associated more closely with meat-based stock, so this is a vegetarian Zaika Potli adaptation built around a lightly seasoned vegetable broth. The Hyderabadi Biryani potli contributes the cardamom, cinnamon, mace, shahi jeera, star anise and other whole-spice aromatics needed for a fragrant stock while allowing the finished rice to remain free of loose spices.

✨ Zaika Potli Secret Technique

Simmer 1 Hyderabadi Biryani potli in the vegetable stock for about 15 minutes. Remove it before the yakhni is strained and used to cook the rice.

🛒 Ingredients

For the Vegetable Yakhni

  • Carrot — 100 g, cut into chunks
  • French beans — 100 g, halved
  • Cauliflower — 150 g, medium florets
  • Green peas — 100 g
  • Onion — 1 small, quartered
  • Ginger — 15 g, sliced
  • Water — 4 cups
  • Salt — ½ tsp

Zaika Potli

  • Hyderabadi Biryani — 1 potli

For the Pulao

  • Basmati rice — 1½ cups / 300 g
  • Ghee — 2 tbsp
  • Onion — 1 medium, thinly sliced
  • Thick curd — ¼ cup / 60 g, whisked
  • Green chilli — 1, slit
  • Salt — approximately 1 tsp
  • Prepared vegetable yakhni — 2½ cups
  • Cooked vegetables from the yakhni — as above

For Finishing

  • Fresh mint — 2 tbsp
  • Fresh coriander — 2 tbsp
  • Fried onions — ¼ cup, optional

👩‍🍳 Cooking Instructions

    Wash the basmati rice until the water runs mostly clear. Soak for 20 minutes, then drain.

    To prepare the yakhni, combine carrot, beans, cauliflower, onion, ginger, 4 cups water, salt and the Hyderabadi Biryani potli in a saucepan.

    Simmer gently for 15 minutes.

    Add peas during the final 3 minutes so they do not overcook.

    Remove the vegetables with a slotted spoon and set aside.

    Remove and discard the potli.

    Strain the broth and measure 2½ cups.

    Heat ghee in a heavy saucepan.

    Add the sliced onion and cook until light golden.

    Lower the heat and add the whisked curd gradually, stirring constantly.

    Add green chilli and cook for 2 minutes.

    Add the drained rice and fold gently.

    Add the cooked vegetables and 2½ cups hot yakhni.

    Add salt, remembering that the stock is already lightly seasoned.

    Bring to a boil, cover tightly and reduce to the lowest heat.

    Cook for 10–12 minutes, then turn off the heat and rest covered for another 10 minutes.

    Fluff gently.

    Finish with mint, coriander and optional fried onions.
💡 Chef's Pro Tip

Keep the yakhni delicate. If the vegetables are boiled aggressively for too long, the stock becomes muddy and the cauliflower can dominate the aroma.
