Ingredients

- Cooked roast lamb or mutton — 350 g, shredded or chopped
- Basmati rice — 1½ cups / 300 g
- Ghee — 2 tbsp
- Onion — 1 large, thinly sliced
- Ginger — 1 tsp, grated
- Green chilli — 1, slit
- Salt — 1 tsp, or to taste
- Hot water or unsalted stock — 2½ cups
Zaika Potli
- Kashmiri Raan — 1 potli
For Finishing
- Fresh mint — 2 tbsp
- Fresh coriander — 2 tbsp
- Fried onions — ¼ cup, optional
- Lemon juice — 1 tsp
Cooking Instructions

1Wash the rice and soak for 20 minutes. Drain.

2Heat ghee in a heavy saucepan.

3Add onion and cook until deep golden.

4Remove a small portion for garnish if desired.

5Add ginger and green chilli.

6Add drained rice and sauté gently for 1 minute.

7Add hot water, salt and the Kashmiri Raan potli.

8Bring to a boil.

9Cover and cook over low heat for 7 minutes.

10Quickly open the lid and scatter the cooked lamb over the partially cooked rice.

11Cover again and continue cooking for 4–5 minutes, until the liquid is absorbed.

12Turn off the heat and rest covered for 10 minutes.

13Remove the potli.

14Fluff gently so the lamb is distributed without shredding the rice.

15Finish with mint, coriander, optional fried onions and lemon juice.
