Podi Dosa
Sprinkle about 1½ tsp Chennai Milagai Podi over each dosa after the surface has mostly set, then add a small drizzle of ghee or sesame oil.

- Fermented dosa batter — 4 cups
- Chennai Milagai Podi — 4 tbsp / about 32–40 g
- Ghee or sesame oil — 4 tbsp
- Water — as needed to adjust batter
Cooking Instructions

1Check the consistency of the dosa batter. It should pour easily but still lightly coat the back of a spoon.

2Heat a cast-iron or non-stick dosa tawa over medium heat.

3Lightly grease if required, then wipe away excess fat.

4Pour approximately ½ cup batter onto the centre.

5Using the bottom of the ladle, spread it quickly in concentric circles into a thin dosa.

6Drizzle about ½ tsp ghee or sesame oil around the edges and a little across the surface.

7Once the surface begins setting, sprinkle approximately 1½ tsp Chennai Milagai Podi evenly over it.

8Drizzle another small amount of ghee or oil over the podi.

9Cook until the base is crisp and golden.

10Fold or roll the dosa and remove from the tawa.

11Repeat with the remaining batter.
Do not add podi immediately after pouring the batter. Waiting until the surface has set prevents the blend from sinking into wet batter and gives a more distinct, toasted layer.

Podi dosa uses milagai podi as a savoury seasoning rather than a separate condiment. Spreading the podi over a thin layer of ghee or sesame oil while the dosa cooks allows the blend to adhere to the surface and toast gently.
