Malvani Mutton Rassa

Malvani-style mutton benefits from a rich roasted base and enough liquid to create a deeply flavoured rassa. The Konkan Malvani Blend supplies much of the spice architecture, while onion, coconut and slow-cooked mutton provide body and savoury depth.

Add 3 tbsp Konkan Malvani Blend before bhuno-ing the mutton, after the basic onion-tomato masala has cooked.

🛒 Ingredients

For the Mutton

  • Bone-in mutton — 800 g
  • Thick curd — ½ cup / 120 g
  • Ginger-garlic paste — 1 tbsp
  • Salt — 1 tsp

For the Rassa

  • Oil — 3 tbsp
  • Onion — 2 large, sliced
  • Fresh grated coconut — ½ cup / 50 g
  • Ginger-garlic paste — 1 tbsp
  • Tomato — 1 medium, chopped
  • Konkan Malvani Blend — 3 tbsp / about 24–30 g
  • Hot water — 3 cups
  • Salt — ½ tsp, then adjust
  • Kokum — 2–3 petals, optional

👩‍🍳 Cooking Instructions

    Marinate mutton with curd, ginger-garlic paste and salt for 1 hour.

    Heat 1 tbsp oil in a kadai.

    Add one sliced onion and the fresh coconut.

    Roast over medium heat until deep golden. Cool slightly and blend with a little water to a smooth paste.

    Heat the remaining oil in a pressure cooker.

    Add the second onion and cook until golden.

    Add ginger-garlic paste and cook briefly.

    Add tomato and cook until soft.

    Lower the heat and add Konkan Malvani Blend.

    Stir for about 30 seconds.

    Add marinated mutton and bhuno for 8–10 minutes.

    Add the roasted onion-coconut paste and mix well.

    Add hot water.

    Pressure-cook until the mutton is tender, generally 25–35 minutes under pressure.

    Allow the pressure to release naturally.

    Add optional kokum and simmer uncovered for 5 minutes.
