Malvani Masala Bhaat

This is a one-pot spiced rice inspired by Maharashtrian masale bhaat, adapted around the Konkan Malvani Blend. The blend gives the rice chilli, coconut, coriander and warm spice depth, while vegetables and peanuts add texture.

✨ Zaika Potli Secret Technique

Add 1½ tbsp Konkan Malvani Blend just before the rice. Fry it briefly on low heat, then cook it into the rice. The blend remains in the finished dish.

🛒 Ingredients

Ingredients

  • Basmati or kolam rice — 1½ cups / 300 g
  • Green peas — 100 g
  • Carrot — 100 g, diced
  • French beans — 100 g, chopped
  • Potato — 150 g, cubed
  • Ghee or oil — 2 tbsp
  • Onion — 1 medium, sliced
  • Ginger-garlic paste — 2 tsp
  • Konkan Malvani Blend — 1½ tbsp / about 12–15 g
  • Peanuts — 3 tbsp
  • Salt — 1¼ tsp
  • Hot water — 2¾ cups

For Finishing

  • Fresh coriander — 2 tbsp
  • Fresh grated coconut — 2 tbsp
  • Lemon juice — 1 tsp

👩‍🍳 Cooking Instructions

    Wash the rice and soak for 20 minutes. Drain.

    Heat ghee or oil in a heavy saucepan.

    Add peanuts and fry until lightly golden. Remove half for garnish.

    Add onion and cook until golden.

    Add ginger-garlic paste and cook briefly.

    Add potato, carrot and beans and sauté for 3 minutes.

    Reduce the heat and add Konkan Malvani Blend. Stir for about 20 seconds.

    Add the drained rice and gently fold for 1 minute.

    Add peas, salt and hot water.

    Bring to a boil.

    Cover tightly and reduce to the lowest heat.

    Cook for 12–14 minutes, or until the rice is tender and the water is absorbed.

    Turn off the heat and rest covered for 10 minutes.

    Fluff gently.

    Finish with coriander, coconut, reserved peanuts and lemon juice.
💡 Chef's Pro Tip

Keep the spice quantity slightly lower here than in a curry. Rice distributes concentrated seasoning through every bite, so over-seasoning becomes much more obvious.
