Malvani Batata Rassa

This potato curry uses the Konkan Malvani Blend to create a robust coconut-chilli-coriander base without requiring a long roster of separate ground spices. Tomato, onion and fresh coconut support the blend rather than duplicate it, creating a reddish, moderately spicy rassa suitable for rice or bhakri.

Add 2 tbsp Konkan Malvani Blend after the onion, coconut and tomato base has cooked. Fry it briefly over low heat before adding potatoes and water. The blend remains in the finished curry.

  • Potatoes — 600 g, peeled and cubed
  • Oil — 2 tbsp
  • Onion — 1 large / about 140 g, finely chopped
  • Tomato — 1 medium / about 120 g, chopped
  • Fresh grated coconut — ¼ cup / 25 g
  • Ginger-garlic paste — 2 tsp
  • Konkan Malvani Blend — 2 tbsp / approximately 16–20 g
  • Kashmiri chilli powder — ¼ tsp, optional for extra colour
  • Salt — 1¼ tsp
  • Hot water — 2 cups

For Finishing

  • Fresh coriander — 2 tbsp
  • Kokum — 2 petals, soaked, optional

👩‍🍳 Cooking Instructions

    Heat oil in a heavy kadai.

    Add onion and cook until golden-brown.

    Add ginger-garlic paste and cook for 1 minute.

    Add fresh coconut and sauté for 2–3 minutes until lightly golden.

    Add tomato and cook until completely soft.

    Lower the heat and add the Konkan Malvani Blend and optional chilli powder.

    Cook for 30–45 seconds, stirring continuously so the spice blend does not scorch.

    Add potatoes and toss thoroughly.

    Add salt and 2 cups hot water.

    Cover and simmer over medium-low heat for 15–18 minutes, until the potatoes are tender.

    Lightly mash two or three pieces of potato into the gravy to create body.

    If using kokum, add the soaked petals during the final 5 minutes, tasting carefully for acidity.

    Simmer uncovered until the gravy reaches a medium rassa consistency.

    Finish with coriander.
💡 Chef's Pro Tip

Because the blend already contains dry coconut, sesame, chilli, turmeric and a broad spice base, keep additional coconut moderate. Too much can make the curry heavy and mute the Malvani seasoning.
