Kathal Dum Biryani
Add 1 Hyderabadi Biryani potli to the kathal masala during its covered cooking stage. Remove before assembling the biryani layers.
Ingredients
For the Kathal
- Young raw jackfruit — 600 g, peeled and cut into chunks
- Oil — for shallow frying
- Salt — ½ tsp
For the Marinade
- Thick curd — ¾ cup / 180 g
- Ginger-garlic paste — 1½ tbsp
- Kashmiri chilli powder — ¾ tsp
- Coriander powder — 1½ tsp
- Turmeric — ¼ tsp
- Green chilli — 1, slit
- Salt — ¾ tsp
Zaika Potli
- Hyderabadi Biryani — 1 potli
For the Rice
- Aged basmati rice — 2 cups / 400 g
- Water — plenty for boiling
- Salt — 1½ tbsp for the boiling water
For the Masala
- Ghee — 2 tbsp
- Onion — 2 medium, thinly sliced
- Mint — ½ cup
- Fresh coriander — ½ cup
For Layering
- Fried onions — ¾ cup
- Saffron — 12–15 strands
- Warm milk — ¼ cup
- Ghee — 1 tbsp
- Kewra water — ½ tsp, optional
Cooking Instructions

1Lightly oil your hands before handling raw jackfruit. Remove any hard central core and cut the flesh into chunks.

2Parboil the jackfruit in salted water for about 6–8 minutes, until slightly tender but not soft. Drain thoroughly.

3Shallow-fry the pieces in a little oil until lightly golden. Cool.

4Combine curd, ginger-garlic paste, chilli powder, coriander powder, turmeric, green chilli and salt.

5Add the fried jackfruit and marinate for 30 minutes.

6Wash and soak the rice for 30 minutes.

7Heat ghee in a heavy handi.

8Add sliced onion and cook until golden.

9Add the marinated kathal and the Hyderabadi Biryani potli.

10Cook over medium heat for 10–12 minutes, adding a splash of water if needed, until the masala coats the jackfruit.

11Add half the mint, coriander and a little fried onion.

12Remove the potli.

13Boil the soaked rice in plenty of well-salted water until about 70% cooked. Drain.

14Layer the rice over the kathal.

15Add remaining mint, coriander, fried onions, saffron milk, ghee and optional kewra.

16Seal tightly.

17Cook over medium heat for 5 minutes, then on the lowest heat for 20 minutes.

18Rest sealed for 10 minutes.

19Open and gently lift through the layers to serve.

My Take On Kathal Dum Biryani
Young jackfruit has a fibrous, substantial texture that makes it especially suitable for dum-style biryani. This preparation is an Awadhi-Hyderabadi-inspired adaptation in which the Hyderabadi Biryani potli infuses the kathal masala before the meat-like pieces are layered with partially cooked basmati rice.
The Secret: Parboiling followed by light frying gives jackfruit a firmer, more savoury texture. If it is cooked until soft before dum, the pieces can collapse while the biryani steams.
