Hyderabadi Vegetable Dum Biryani

Vegetable dum biryani depends on separately prepared rice, a well-seasoned vegetable masala and a final sealed dum rather than simply cooking vegetables and rice together. The Hyderabadi Biryani potli provides the whole-spice layer in the vegetable gravy, while herbs, curd, chilli, saffron and fried onions build the remaining biryani character.

✨ Zaika Potli Secret Technique

Cook 1 Hyderabadi Biryani potli with the marinated vegetable masala for approximately 12–15 minutes. Remove it before layering with rice and beginning dum.

🛒 Ingredients

For the Rice

  • Aged basmati rice — 2 cups / 400 g
  • Water — plenty, for boiling
  • Salt — 1½ tbsp for the boiling water
  • Lemon juice — 1 tsp

For the Vegetables

  • Cauliflower — 150 g, florets
  • Carrot — 120 g, batons
  • French beans — 100 g, cut into pieces
  • Potato — 150 g, cubed
  • Green peas — 100 g

For the Marinade

  • Thick curd — ¾ cup / 180 g
  • Ginger-garlic paste — 1½ tbsp
  • Kashmiri chilli powder — 1 tsp
  • Turmeric — ¼ tsp
  • Coriander powder — 1½ tsp
  • Green chilli — 2, slit
  • Salt — 1 tsp

Zaika Potli

  • Hyderabadi Biryani — 1 potli

For the Masala

  • Ghee — 2 tbsp
  • Oil — 1 tbsp
  • Onion — 2 medium, thinly sliced
  • Tomato — 1 medium, chopped
  • Mint leaves — ½ cup, loosely packed
  • Fresh coriander — ½ cup, loosely packed

For Layering

  • Fried onions — ¾ cup
  • Warm milk — ¼ cup
  • Saffron — 12–15 strands
  • Ghee — 1½ tbsp
  • Rose water or kewra water — ½ tsp, optional

👩‍🍳 Cooking Instructions

    Wash the rice and soak it for 30 minutes.

    Combine the vegetables with curd, ginger-garlic paste, chilli powder, turmeric, coriander powder, green chilli and salt. Rest for 30 minutes.

    Soak saffron in warm milk.

    Heat ghee and oil in a heavy handi.

    Add onions and cook until golden.

    Add tomato and cook until soft.

    Add the marinated vegetables and the Hyderabadi Biryani potli.

    Cook uncovered for 5 minutes, then cover and cook over medium-low heat for 8–10 minutes. The vegetables should be approximately three-quarters cooked.

    Add half the mint, half the coriander and about one-third of the fried onions.

    Remove the potli and set the vegetable masala aside.

    Bring a large pot of well-salted water to a vigorous boil.

    Add the soaked, drained rice and lemon juice.

    Cook until the grains are approximately 70% cooked: elongated and soft outside, but still distinctly firm at the centre.

    Drain immediately.

    Spread the partially cooked rice over the vegetable masala.

    Add remaining mint, coriander and fried onions.

    Drizzle over saffron milk, ghee and optional rose or kewra water.

    Seal the pot tightly with foil or dough and cover.

    Cook over medium heat for 5 minutes, then over the lowest heat for 20 minutes. A tawa under the handi can help diffuse heat.

    Turn off the heat and rest, still sealed, for 10 minutes.

    Open and gently lift the biryani from the sides rather than aggressively mixing it.

The rice entering the dum stage must be undercooked. Fully cooked rice layered over moist vegetable masala will become soft and clumped during the final steaming.
