Hyderabadi Chicken Dum Biryani
Cook 1 Hyderabadi Biryani potli with the marinated chicken during its initial 8–10 minute cooking stage. Remove it before layering the rice and beginning dum.
Ingredients
For the Chicken Marinade
- Bone-in chicken — 1 kg, medium curry-cut pieces
- Thick curd — 1 cup / 240 g
- Ginger-garlic paste — 2 tbsp
- Kashmiri chilli powder — 1½ tsp
- Hot chilli powder — ½ tsp, optional
- Turmeric — ¼ tsp
- Coriander powder — 1½ tsp
- Green chillies — 3, slit
- Lemon juice — 1½ tbsp
- Fried onions — ¾ cup
- Fresh mint — ½ cup, loosely packed
- Fresh coriander — ½ cup, loosely packed
- Oil — 2 tbsp
- Ghee — 1 tbsp
- Salt — 1¾ tsp
Zaika Potli
- Hyderabadi Biryani — 1 potli
For the Rice
- Aged basmati rice — 2½ cups / 500 g
- Water — plenty for boiling
- Salt — 2 tbsp for the boiling water
- Lemon juice — 1 tsp
For Layering
- Fried onions — ¾ cup
- Fresh mint — ¼ cup
- Fresh coriander — ¼ cup
- Saffron — 15–20 strands
- Warm milk — ¼ cup
- Ghee — 2 tbsp
- Kewra water — ½ tsp, optional
Cooking Instructions

1Combine all the chicken marinade ingredients except the potli in a large bowl.

2Add the chicken and coat thoroughly. Cover and refrigerate for at least 4 hours.

3Soak saffron in warm milk.

4Wash the basmati rice until the water is mostly clear, then soak for 30 minutes.

5Transfer the marinated chicken to a heavy handi and add the Hyderabadi Biryani potli, keeping it nestled in the marinade.

6Cook over medium heat for 8–10 minutes, stirring gently, until the chicken loses its raw exterior but remains only partially cooked.

7Remove the potli and turn off the heat.

8Bring a large pot of well-salted water to a vigorous boil.

9Add the soaked, drained rice and lemon juice.

10Cook until the rice is approximately 70% cooked. The grains should have lengthened but retain a firm centre.

11Drain immediately.

12Spread the rice evenly over the chicken.

13Scatter fried onions, mint and coriander over the top.

14Drizzle with saffron milk, ghee and optional kewra.

15Seal tightly with foil or dough and cover with a lid.

16Cook over medium heat for 5 minutes.

17Reduce to the lowest possible heat and cook for another 20–25 minutes.

18Turn off the heat and rest sealed for 10 minutes.

19Open carefully and lift the biryani from the sides so some chicken and masala come up with the rice.
The moisture in the marinated chicken is part of what finishes the rice on dum. Do not cook the chicken masala until dry before layering.
