✨ Zaika Potli Secret Technique
Add 1 Gut Comfort potli to the poaching liquid before the pears. Let it infuse for approximately 12– 15 minutes, then remove before reducing the syrup.

- Firm ripe pears — 4 medium / about 600 g
- Water — 1 cup / 240 ml
- Jaggery or brown sugar — 50 g
- Lemon juice — 1 tbsp
- Salt — 1 tiny pinch
Zaika Potli
- Gut Comfort — 1 potli
For Finishing
- Chopped pistachios — 2 tbsp, optional
- Thick yoghurt — to serve, optional
Cooking Instructions

1Peel the pears if desired, core them and cut into 2 cm pieces.

2Add water, jaggery and the Gut Comfort potli to a saucepan.

3Bring to a gentle simmer.

4Add the pears and tiny pinch of salt.

5Cover partially and simmer for 10–12 minutes, stirring occasionally.

6The pears should become tender but not collapse completely.

7Remove the potli.

8Add lemon juice.

9Simmer uncovered for another 3–5 minutes until the liquid becomes lightly syrupy.

10Cool slightly before serving.

11Garnish with pistachios if desired.
💡 Chef's Pro Tip
Use pears that are ripe but still firm. Very soft pears will dissolve before the poaching liquid has had enough time to take on the potli's aroma.
