- Cooked rice — 4 cups, preferably cooled
- Chennai Milagai Podi — 3½ tbsp / about 28–35 g
- Ghee — 2½ tbsp
- Mustard seeds — ½ tsp
- Curry leaves — 10
- Cashews or peanuts — 2 tbsp, optional
- Salt — only if required
Cooking Instructions

1Separate the cooled rice grains gently with your fingers or a fork.

2Heat ghee in a wide kadai.

3Add mustard seeds and allow them to crackle.

4Add curry leaves and optional cashews or peanuts.

5Fry until the nuts are lightly golden.

7Add Chennai Milagai Podi and stir for only 10–15 seconds.
