- Potatoes — 700 g
- Cornflour — 3 tbsp
- Green peas — 100 g, cooked and lightly mashed
- Ginger — 2 tsp, grated
- Green chilli — 1, finely chopped
- Signature Garam Masala — 1¼ tsp / about 4 g
- Roasted cumin powder — ½ tsp
- Amchur — ¾ tsp
- Fresh coriander — 3 tbsp
- Salt — 1¼ tsp
- Oil or ghee — for shallow frying
Cooking Instructions

1Boil the potatoes until tender.

2Drain and let them steam-dry for 10 minutes before peeling.

3Mash until smooth.

4Add cornflour, peas, ginger, chilli, Signature Garam Masala, roasted cumin, amchur, coriander and salt.

5Mix gently until evenly combined.

6Divide into 10–12 portions.

7Shape into flat patties about 1.5 cm thick.

8Refrigerate for 15 minutes if the mixture feels very soft.

9Heat a thin layer of oil or ghee on a tawa.

10Cook the tikkis over medium heat until deeply golden and crisp underneath, approximately 4–5 minutes.
