Bengali Panch Phoron Aloo

- Potatoes — 600 g, peeled and cut into 2 cm cubes
- Mustard oil — 2 tbsp
- Bengal Panch Phoron — 1½ tsp / approximately 4–5 g
- Dry red chilli — 1
- Turmeric — ½ tsp
- Green chilli — 1, slit
- Salt — 1 tsp
- Water — ½ cup
- Sugar — ¼ tsp, optional
For Finishing
- Fresh coriander — 1 tbsp, optional
Cooking Instructions

1Heat mustard oil until it just begins to shimmer, then reduce the heat slightly.

2Add Bengal Panch Phoron and dry red chilli.

3Let the seeds crackle for 20–30 seconds. Do not allow the fenugreek to turn very dark or it may become bitter.

4Add the potatoes and turmeric immediately.

5Toss thoroughly so the potatoes are coated in the tempered oil.

6Cook uncovered for 4–5 minutes, stirring occasionally.

7Add salt, green chilli and ½ cup water.

8Cover and cook over medium-low heat for 10–12 minutes.

9Uncover and continue cooking until the potatoes are tender and any remaining liquid has evaporated.

10Add the optional pinch of sugar if you prefer a subtle Bengali-style sweet-savoury balance.
